Is 30L enough for an overnight?

Only in summer, with a compact sleeping bag and no tent, and it will be tight. If you are carrying shelter and a sleeping system, start at 31L to 50L.

What size do I need for day hiking?

20L to 30L covers a day out with layers, food and water. Under 20L suits a short walk or the commute, where you are mostly carrying a jacket and a laptop rather than kit.

Do I need MOLLE?

Only if you intend to mount pouches. MOLLE webbing adds weight and bulk, so for hill walking a plain hiking daysack is usually the better carry. For airsoft, cadet or duty use it earns its place.

How do I know it will fit me?

Back length matters more than volume. Several packs here are offered in women's specific fits with a shorter back and shaped shoulder straps, which is worth choosing on fit rather than on the label.
